Chicken and Mushroom Orzo
#MUSHROOM AND CHICKEN ORZO! This is another delicious recipe from @MOBkitchen and @JustAddMushrooms that I tried out, celebrating the versatility of mushrooms. If you haven’t tried orzo before, it’s essentially the love child of pasta and rice and is the skinnier distant relative of risotto. It’s the best.
Adding mushrooms to this dish along with rosemary, thyme, and white wine (that rhymed), gave such a luxuriously caramelly and smooth texture. The mushrooms absorbed every drop of flavour! What’s great is that mushrooms wilt down and release moisture when cooking, meaning that you can add LOTS without overcrowding your pan and what’s even better is that 80g of mushrooms count towards 1 of your 5 a day.
